The base is scaled for the length of the event with pieces per guest = base × (0.5 + 0.25 × hours), so a four hour event serves about one and a half times as much as a two hour one. Total pieces = guests × pieces per guest, plus a 10% buffer. Dividing by the number of different appetizers gives the amount of each. Add more heavy items such as meatballs or sliders when appetizers are the whole meal, and plan extra for guests with food allergies or diets.
